I love this book.  If I can quote myself: It’s true, I read at a fourth grade level. But, this book sings to me. Knowing a place’s history helps me understand it’s current focus and likely trajectory. It’s like the History Channel high on Truffles.

If you haven’t made it out to Tony C’s Coal Fired Pizza in Bee Cave, it’s worth a trip. Pretty good pie. The cooks and I talked a little dough. They practice cold fermentation. Which I think is the right move. Better control over gluten development and a more complex taste. If you are thinking about heading on over, I’ll make the decision a little easier.
