Summer Fajitas in Winter

I can’t wait for Summer! Don’t believe me? I’m wearing a bathing suit right now (picture not available).  I cooked up some Fajitas as an offering to the weather gods to bring the heat (which I will surely regret come August)! Grilled Chili Lime Marinated Chicken with Anaheim and Red Peppers. Dressed with sour cream, cheddar cheese, and cilantro.

I start the onions first, to get that nice caramelized taste. Next, in go the Anaheim and Red Bell peppers. They are sliced thin and cook reasonably fast and still have a little crunch. I prefer thin so you don’t get a huge bite. I like the chicken to be the star. For the veggie inclined, I also grilled squash. Like the chicken, I wanted the squash to stand out as the centerpiece of the veggie fajita, so I cut them in larger chunks.

    So was the epic snow today the gods being displeased with your fajita goodness??? Gods must be crazy indeed. But if so, do it again please!!! I want more snow!

  2. I shoot almost exclusively with available light, so I just up the ASA and hope for the best. I do use a strobe and softbox for Viola and Jean. But, that is a different animal.

  3. Thanks for the feedback. Your photos always look so beautifully lit. So torn between getting a real camera and having one I can just throw in my bag. Maybe I need one of each.
