Drowning Cucumbers

Tomatoes rage on and now, here come the cucumbers. They are everywhere. I literally mowed a half dozen that had snuck up on me when I was doing lawn maintenance.

Look at this crazy Lemon Cucumber. I am pickling a few of these to see if they turn into actual lemons.

Using a Mandolin slicer makes this task bearable. Plus, you’ll have perfect, uniform pickles. The pickling mix: Two tablespoons each of black peppercorns, mustard seeds, coriander seeds, red pepper flakes, allspice berries and whole cloves. One tablespoon ground mace, a couple bay leaves and a cinnamon stick. The brine bath is made up of 5 tablespoons salt, 1/2 cup white vinegar, 1 teaspoon black peppercorns, 1 tablespoon of the pickling spice that you just slaved over and 5 cups water. Store in the fridge. These should be good to eat in a month or so. They say the waiting is the hardest part.
