I make my own pancetta ( what else is a coat closet good for in texas? other than to hang random decomposing pieces of meat ) and it’s my favourite pizza topping … Will definitely have to try it with figs.
my other favourite use for pancetta is sauteed with green beans and garlic slices ( and a few anchovies for bonus points ).
Whoaaaaa. I hope sometime you will make this for a pizza party that non-Virgos are invited to!
this was a solo project. Offering up pork to Vergos would be too dangerous.
