Check Your Foie at the Door

Another dish I can make when I believe there is nothing in the house to eat: Gallo Pinto. Ready to have all the magic stripped out of that name? Gallo Pinto = Beans + Rice. But, like Pamela Anderson, it is more than the sum of it’s parts. I was introduced to this dish in Costa Rica, where it has been elevated to a high art.

There are many variations, but here is mine: Simmered yellow onion, peppers and garlic mixed with steamed white rice and black beans. Chopped green onions? Sure. Shredded lettuce? OK. Foie Gras? Ya, right.

  1. Gallo Pinto is one of the best recipes I know because you can feed 20 people on like 50 cents and you don’t even have to shop. Definitely sans foie for me.
