As per our usual New Years Eve ritual, we did nothing. My lady gets to request an end of year dish and I cook it up. This year, Goat Cheese Enchiladas on Spanish Rice.
Spanish Red Sauce: Chicken Stock, Tomato Puree, Peppers, Garlic, Yellow Onion, Chili Powder… Salt, Pepper, and other stuff. Jam an immersion blender in it and you are good to go.
I like making rice. The act embodies all the the things I love in life: Interesting Flavor Profiles (yellow onion, peppers, cilantro), Two to One Ratios (H2O to rice) and Scalding Steam.
