Big Breakfast

Company coming into town for the holiday? Need to feed an army? You almost can’t make a cheaper breakfast than pancakes. Everybody loves pancakes. The only trick is having enough of them done at one time so everyone can sit down and eat together. I got one word for you: sheet pan. That’s right, I can’t count, but I do know the value of sheet pans. As you finish cooking some cakes, transfer them to a sheet pan and keep them in a warm oven. You will have a mountain of flapjacks to serve all at once.

The Big Show

Here we are again, time for the Big Eat. If you haven’t started thinking about a cooking strategy, now would be a good time to start (unless you are going with Hot ThanksgivingPockets). I hate to me cooking like mad when company shows up, so anything I can put on the menu that I can make ahead, I do. Obviously stock can be prepped or pulled from the freezer if you are way ahead of the game. Much of the traditional things work well reheated. Stuffing and mashed potatoes can be made a day before.I am digging condiments right now: chutney, jam, pickles and the like. Get that turkey in a brine . It will take on extra liquid and be incredibly juicy, even through it got accidentally over cooked by an hour because you got distracted by the game on TV.

East Side Art Eats and Drinks

I can’t believe how big the East Austin Studio Tour has become. Freak’n huge! And, where ever there is a crowd, there is food. Cafe Mundi (who’s employee started this whole debacle) is cooking up Giant Waffles and will have breakfast taco’s at their HOPE farmers market booth. Progress Coffee, on Saturday 7pm, is having free libations available courtesy of Tito’s Vodka, Sweet Leaf Tea and Maine Root. A group bar tour takes off from Progress after that.Below is a list of all the participating business where you can get your eat and drink on.

Three Ingredient Quick Snack

What a great ‘go-to’ snack. I keep Central Market tortillas in my freezer, so I always have them on hand. We always have cheese in the fridge, my wife makes sure. That is almost all you need to make Quesadillas. Plus, maybe, an open flame and a pan. I usually scrounge around and find some leftover onions or chicken or something to spice it up. Very satisfying, very easy.

Whole Wheat Tortillas, Tillamook Mild Cheddar Cheese, Minced Grilled Chicken, Chili Powder
