A glowing pink pound gets fed through the KitchenAid grinder’s medium die, along with a couple cloves of garlic. Sage, dried oregano, fennel seeds, ground dried chilis, salt and pepper provide the flavor pack. For the binder: one egg, ½ cup Panko breadcrumbs and a cup of shredded mozzarella.
