Birthday Request

It was my wife’s birthday this week, and the requested dinner was Goat Cheese Enchiladas. Wonderful mix of hot and sweet (not unlike my wife). The tartness of the cheese plays great against the tangy, hot red sauce. It’s a crowd pleaser. But, to do it right, it takes a while. Everything except the rice can be made ahead of time. When you are ready, you just need to prep the rice and re-heat the enchiladas.

The most important part of this dish is the red sauce, specifically, Ancho chilies. The sauce starts with an Ancho paste that is deadly. It stains everything and burns your mouth out. Appetizing, huh? Then, it is mixed with garlic, red onion, canned tomatoes, chicken stock, white wine and honey. The tortillas get a dip in the sauce before the goat cheese mix gets rolled in. Next, fill a casserole dish with the stuffed tortillas and cover the whole thing with more sauce.
