Chicken Parmesan Fix

It’s hot out, which usually dissuades me from cranking up all the burners in the kitchen. But, every so often, I need a Chicken Parmesan fix. I have tried countless variations of this dish: sliced tomatoes, wrapped in prosciutto, herbed pasta…but the original can’t be beat.

A chicken breast pounded flat will give you two portions. UseĀ Panko breadcrumbs and Parmesan cheese for an excellent crunch.

My red sauce is a simple one: San Marzano tomatoes, red wine, dried oregano and honey. Reduce it slightly. I think if you cook it too long you loose the fresh tomato taste.
