Kocurek Family Charcuterie

People are looking at food differently. I don’t know if it is the economy or what. But, old ideas about food are coming back into fashion. Who would have guessed that butchers could be rock stars: Avedano’s Holly, Dario Cecchini? There is an interest in the ways we use to do things: growing a garden, making pickles, local products. Evidence in Austin? Charcuterie. I just met Lawrence and Lee Ann Kocurek at the new HOPE Farmers’ Market. Lee Ann, a Sommelier who has worked with The Austin Wine Merchant and Lawrence, who is the head of culinary instruction at Whole Foods, together run Kocurek Family Charcuterie. They produce Paté, Terrines, Cassoulet, pickled vegetables and more. I picked up some Toulouse style, Wild Boar and Rabbit Cassoulet. Fantastic stuff. They even packaged the breadcrumbs in a separate container so they wouldn’t get soggy. Check them out today at the Farmers’ Market at the Triangle, Saturday at Sunset and Sunday at HOPE.
