Pancakes

Company coming into town for the holiday? Need to feed an army? You almost can’t make a cheaper breakfast than pancakes. Everybody loves pancakes. The only trick is having enough of them done at one time so everyone can sit down and eat together. I got one word for you: sheet pan. That’s right, I can’t count, but I do know the value of sheet pans. As you finish cooking some cakes, transfer them to a sheet pan and keep them in a warm oven. You will have a mountain of flapjacks to serve all at once.

Bacon. It’s a the vegetarian gateway drug. Everybody knows this. I line a sheet pan with parchment paper and cook the bacon in the oven. It takes a little longer, but it comes out crisper and you can cook a ton at one time.

pancakes

I make batter from scratch: 1.5 cups flour, 2 tbsp honey, 1/2 tsp baking powder, 1/4 tsp baking soda, 1/4 tsp salt, 1 3/4 cups milk, 2 eggs. Let it sit after you mix it, just like you would other doughs, so the flour fully hydrates. Cook on medium-high heat. Watch for the bubbles to pop, they let you know when its time to flip. Now, go forth and feed the hungry masses like the hero chef you are.
