Pizza Night with the Godfather

Another great pizza night last week. Once again, for your (visual) eating pleasure, I give you the Godfather. Italian Sausage, Caramelized Yellow Onions and Smoked Mozzarella. My New Years resolution of an all pizza diet for 2010 is right on track!

Onions

I cut the onions pretty big, maybe inch and a half squares. They cook down in size when they caramelize, but they are still big enough to represent a distinct topping on the pizza. I was looking for them to be their own bite.

Sausage

Sorry, Central Market, but Kocurek Family Charcuterie is my new house sausage. It’s fantastic. No connective tissue or any other crunchy stuff. Bright spice flavor. I wish I could get this stuff at a store in town. By the time I come dragging in to the farmers’ markets, they are usually sold out. Though, if I was smart, I could email them ahead of time. They will hold product for you at the market.
