This Should Be Every Night

You can’t not like this. Chips! Who knew they didn’t originally come in a bag? Hot, greasy, salty, crispy. I don’t even want to know you if you aren’t on board.

Roasted vegetables on their way to salsa. Beef steak tomatoes and jalapenos after their trip through the oven. This, along with white onion, garlic and cilantro, become goodness in the Cuisinart.

Life wouldn’t be as good if Central Market stopped making corn tortillas. Tamp them down during frying so they don’t bobble out of control–they will balloon up on you. Drain them on paper towels or a wire wrack and hit them with a sprinkling of salt. These will be the best chips you’ve ever tasted.

  1. On the salsa — I use the same basic recipe, but try substituting serranos for jalepenos, and in the blender add some pureed chipotle (just puree a can — it keeps a long time in the frige). Sometimes I add just a little honey and a little fresh lime juice.

  2. Grrrr. I just discovered your site (sadly, pathetically, because I have no idea what took me so long). But I’m already behind. Are recipes posted somewhere that I’m missing? Because I want to know more – esp. about these chips and that salsa. Did you use CM corn tortillas? Did you fry in vegetable oil? I’m from south Texas and make a decent salsa, but I want more info on yours!
    Can’t wait to spend some time today going through your archives.
