Sweat minced carrot, onion and celery in a big pot until they are soft, 10-15 minutes. Add to that a mixture of 2/3 ground bison and 1/3 ground pork. Stir over high heat till the meat is cooked through. Add white wine, tomato paste and heavy cream. Reduce to a simmer and let it percolate for a couple hours.
Add rosemary, salt and pepper to taste. Mix with pasta, eat and exclaim about what an incredible feast you have created. If you have any gold stars laying around, put one on your shirt.
