Building A Summer Sauce

Yellow Tomato

I have been working on Summer sauce to go with grilled foods (chicken or fish). Basically it is pureed tomato, pepper and garlic oil. I pass the yellow tomatoes through a food mill to remove the skins and seeds. They act as the base. They are uncooked to retain as much of their flavor as possible.

Roasted Red Bell Pepper

I char the red peppers over a gas flame and steam the skins off by putting the peppers into a plastic bag or in a bowl with a plate over it. After they have cooled down you can rub the skins off.

Garlic Oil

Garlic oil. Pretty easy. Cut a clove in half and simmer in oil. Great way to get garlic flavor into things without introducing a texture. I’ll post the final dish tomorrow.
