Cheese Herb Ravioli

Basil, Parmesan and Ricotta Ravioli with a chunky red sauce.

I used some local ricotta from Wateroak Farms in Bryan, TX. The basil is from my garden.

It has been raining like crazy this summer and the plants are loving it. The oregano is hip-high.


 

Drum Stick


Inspired by Jesse Griffiths' great chicken on Sunday, I made up some of my own. The key is seasoning the flower. I use paprika, garlic powder, salt and pepper.

I just did a wonderful two day tour of a local Austin farm, Boggy Creek Farm. The event was catered by Jesse Griffiths and Tamara Mayfield of Dai Due. They run a supper club specializing in using only local products. The roast beef sandwich was wonderful as well as the grilled chicken.


 

My Wife Is Out Of Town

While my wife is out of town, I thought I would do what any guy would and sharpen up my pasta
dough recipe.

I have a pasta cutter and it only ever seems to get every other cut right. So I mixed my dough twice as longs as I usually do and made sure it was firm. It worked! It cut perfectly.


 

Rough Scones

I know, I know... they ain't pretty. But, I'm working on them. And to have the smell of hot scones on a Sunday, just makes the morning go that much smoother.


 

Raspberry Chicken Salad

I think people tend to over-cook chicken. I'm not talking medium-rare, but just done. When there is still some moisture in there. I cook mine on medium heat so I can slow down the process and monitor it better. The salad is a raspberry vinaigrette with feta and red onions.


 

Peach Green Rooibos

It's not even really a tea, its a bush that grows in Africa, but it makes a mean glass of iced tea. I buy it from a great tea place downtown, The Tea Embassy.


 

Puerco Pibil

Traditional Yucatan dish. What makes it special is the use of annatto seeds in the acidic marinade. From there, it is basically a braised pork dish. Robert Rodriguez used this dish in his movie Once Upon a Time in Mexico. If you have the DVD, there is a special feature with Robert cooking it.


 

I'm Lying To You

Black bean, chicken, avocado tostadas. I'm sure you can tell, they were horrible.


 

Heart Attack Special

I guess the picture is a little prettier than the title. Wonderful way to roll into a Sunday.

The obvious key is the hollandaise. I don't think it is as hard to make as people think it is. The only hard part is deciding if you are going to tell everyone who is eating how many egg yokes and sticks of butter are in the sauce.


 

Tomatoes: Update

Well, we might as well check on the tomatoes while we are at it. I am guessing they are maybe a third of the way there.


 

Lump Charcoal Review

I came cross this site that reviews different brands of charcoal. It seems a little funny for someone to have such a site, but actually I am pretty jealous. Glad to see they like B&B as much as I do.


 

Meyer Lemons: Update

I thought I would give you an update on how our Meyer Lemon tree is doing. If you recall, it was just budding a few months ago. Besides great fruit, I was pleased to find out that these trees grow well in our climate. I didn't realize that it took this long to make Lemon Confit.


 

Chicken Soft Tacos with Chipotle Aioli

I use Café Josie Chipotle Aioli. It's so good, there is no point in making it myself.


 

Guacamole

Avocado, diced tomato, lime, salt and white onion. Let it stand an hour or so to mix the flavors. Warming up the chips is a nice touch also.


 

Summer Drink Special - Border Style

Iced Mexican beer with salt and lime.
UPDATE: Miller Beer is copying me! Just saw an ad for their new salt/lime beer.


 

Sunday Suppers at Lucques: Borrowed Chicken

This recipe for Devil's Chicken with Leeks has been a hit at my house. Lots of herbs and mustard. It is based on Julia Child's recipe in The Way to Cook.

I follow the recipe pretty closely, though most prefer chicken breasts to thighs. To compensate for the shorter cooking time of a skinless-boneless breast, I eliminated the second cooking stage and instead broil the chicken to crisp up the bread crumbs.

Leeks don't get much attention these days, but this recipe put them back on the map for me. It also got me poking around for other neglected vegetables.


 

Apple Crisp

My wife says she doesn't think I can possibly add any more butter to this dish. I keep trying to prove her wrong.


 

Grilled Chicken

Hardwood charcoal. I use B&B. Most of the other brands I have tried look like chopped up 2 x 4's. B&B is big lumps of Mesquite. I grill up a bunch of chicken for the coming week to eat in tacos. (Usually standing there holding a beer feeling very manly.)
