Found Salad

A lot of heavy food was consumed over the holidays. Prime Rib, Roast Tenderloin, Creme Brulee. Heavy. It was all good, but I am looking forward to eatingĀ at the other end of the spectrum. A salad is about as polar opposite as you can get. This one was created after a scavenger hunt in the back of my refrigerator: Romaine, Grilled Chicken, Cherry Tomatoes, Croutons and a Lemon Vinaigrette.

The dressing was the only part that needed assembly. I know why there are so many salad dressings on the market. Because they are painfully simple to make. And, you probably have all the ingredients in your house already. The basics are: 3/4 c oil, 1/4 cĀ vinegar + seasoning. For this salad I used olive oil, champagne vinegar, salt, pepper, dijon mustard and lemon zest.
