This is not an attempt to corner the Austin marshmallow market. This was an attempt at mozzarella mediocrity. Pictured above are separated curds and whey, heading towards mozzarella. A gallon of milk, crushed down to floating white stuff and yellow water. Damn, this is hard! It took three attempts just to get the curds and whey separated properly. I need a wizard. Lactose is confusing.
Here it sits, beautiful, the curds. Unbelievably white. All the fat and flavor of the milk. IF ONLY IT WOULD LET ME STRETCH IT. I’ve calmed down now. I’ll try tomorrow. Buy stock in milk. I should be using quite a bit.
