Football Fuel

My wife likes football. Maybe I didn’t explain that well enough. She likes UT football. Only UT football. And, any team that is playing against them, she hates. She stands on the coffee table and screams at the TV. Heaven forbid if a group of elderly nuns decided to play against them. Anyway, she burns a lot of calories when she watches the game (with all the jumping up and down and screaming). The requested fuel? Seven layer dip.

I had never made this before, but it’s not too hard. I just try to stick with high-grade, fresh ingredients. The base is beans. We always have some black beans in the pantry, so I use those andĀ puree them with an immersion blender (right in the can). Next, mash up some avocados and mix with white onion, jalapeno and lime juice. That would be the guacamole layer. I leave out the tomato and cilantro, because the salsa will have those components. Next, grated cheddar, then salsa, sour cream and top with green onions. I chill it in the fridge to firm up the layers. OK, you got me. I guess this would be a six layer dip.

  1. I am also a UT fanatic! You should surprise her with a longhorn shaped tin with seven layer dip….it always taste so much better to me !
