Potato and Leek Soup

Potato and Leek soup was one of the fist things I ever cooked. Straight out of Julia Child’s The Way To Cook. I figured, two ingredients, what could go wrong? Well, I neglected to add any salt. It could have been worse, I could have over-salted it. Lesson learned. Since this soup is so simple, I try to make the croutons as special as possible. These were sprinkled with garlic and onion powders and fried in olive oil.

Leeks

The best tip I heard on washing leeks (because they hold dirt like a five year old) is to hold them upside down while you are washing them. That way the dirt doesn’t get trapped in the root base.
