Here we are again, time for the Big Eat. If you haven’t started thinking about a cooking strategy, now would be a good time to start (unless you are going with Thanksgiving Hot Pockets). I hate to be cooking like mad when company shows up. So anything I can put on the menu that I can make ahead, I do. Obviously stock can be prepped or pulled from the freezer if you are way ahead of the game. Many of the traditional foods work well reheated. Stuffing and mashed potatoes can be made a day before. Right now, I am digging condiments: chutney, jam, pickles and the like. Get that turkey in a brine. It will take on extra liquid and be incredibly juicy, even though it got accidentally over cooked by an hour because you got distracted by the game on TV.
