I posted before about this dish, but I love it, so here we go again. Gallo Pinto (Guy-O Peent-O). It’s good eats on the cheap. Basically, it’s juiced up rice and beans. A mainstay in Costa Rica.
Start with some Jasmine rice: two cups water to one cup rice, bring to a boil, cover, reduce heat and let it steam for 25 minutes. While that is percolating, saute some yellow onions, garlic, green and red peppers. Add to that a can of black beans, liquid and all. When the rice is done, fluff it right into the pan with all the other goodies and mix. The rice will soak up all the flavors. I look for a 50/50 balance of rice to the other components.
The real deal, smuggled over the boarder (Amazon.com has it too). This sauce is everywhere in Costa Rica. You can’t tip over a Howler Monkey without finding some. Spice and sweet, it’s the perfect sauce for Gallo Pinto.

So simple and so good. Beside on it’s own, I put it in taco’s or serve it as a side. Viva Gallo Pinto!
