Not sure what you would call this salad. It almost made it to Cobb status, but fell short. I call it ‘whatever is in the refrigerator’ salad: romaine, grilled chicken, cheddar, red onion and bacon with a light vinaigrette. Reconstructed egg-less Cobb or random salad compiling. You decide.

I’d say that approaches a Cobb. I just had the best version of Cobb at Food Heads on 34th & Guadalupe. My only problem with this salad is the bacon – what are your thoughts on subbing in turkey bacon, or tofu bacon?
There is very little that can be substituted for the real thing. I usually go without if it isn’t pig… unless it’s duck.
I drive by that place all the time and have never been in. I’ll check it out, thanks.
Oh, you should! Their food is great. I’m especially fond of the roast beef & brie sandwich.
