That’s right, we are in the low 90’s with 65% humidity. Winter is here! Heaping bowls of steaming stews, rich slow braised lamb shanks and cocoa by a roaring fire (to make it feel like it’s 104 degrees again).
In honor of this dramatic weather change, I am browsing the Woolrich catalog and making Lasagna. A few things that I am not a fan of in lasagna: ricotta, tomato sauce and mozzarella. A few things that I am a fan of in lasagna: bolognese, bechamel and fresh pasta.
Bolognese: diced onion, diced carrot, garlic, ground bison, ground pork, heavy cream, white wine
Bechamel: white rue (butter and flour), milk, nutmeg
Pasta: four cups flour, five eggs (mixed and rested for an hour, rolled thin)
The build: Parmigiano – Pasta – Bolognese – Bechamel – Parmigiano – Pasta – Bolognese – Bechamel – Parmigiano – Pasta – Bolognese – Bechamel – Parmigiano – Pasta – Bolognese – Bechamel
