Stay On The Fish

My problem with cooking fish is that I want it as fresh as I can get it. So, that means I like to buy it the day I cook it. I don’t mind going to the store, but sometimes it gets late, it’s hot outside, my favorite Mexican soap opera is on… and I never make the run. I have to be more diligent.

The fish dish this week: Halibut, tomato and roasted corn enchiladas with a tomatillo salsa. Perfect dish for summer because you can prep everything ahead of time. Meaty fish, sweet and smoky corn and a tangy sauce = Awesomeness.

  1. Michael: The cheese (Monterey Jack) is actually the only fat on the plate (besides some in the fish itself). The fish and corn are grilled with no oil or other fat on them. The tomato and tomatillo sauce are raw. All-in-all, it’s probably pretty good for you.
