Flashback to the 90’s Salad

This salad has been around for awhile. It’s a survivor. The 90’s were rough on all of us, but this salad is still kicking (more than I can say for most of us).  Mixed lettuces with bacon, goat cheese, shaved red onion, some fruit (in this case, raspberries) and a nice, little, honey mustard vinaigrette.

Three parts olive oil to one part rice wine vinegar + dijon mustard, honey, raspberries, salt and pepper. All of this stuff goes into a jar. Shake it till your wrist hurts. You will know you’re there when it looks like salad dressing.

I have had it with the frou-frou way of caramelizing nuts where you shake shake sugar all over a pan, wasting most of it. The coating is uneven. Are your nuts roasted? Who knows? You are doing two things at once: toasting the nuts and coating with sugar. I break the two things apart. Toast the chopped nuts, then dunk them in simple sugar. Transfer them to parchment paper when they are cool, break them apart with your hands. Easy, huh? And, no burned sugar smell in your casa!
