I think potatoes should get their own holiday. Why not? We celebrate every other thing. My wife works for the State and she gets Confederate Heroes Day off. (It falls on the same week as MLK Day–what’s up with that!?) Potato Day would be way cooler. And, I don’t want one of those roving holidays either. Monday one year, Thursday the next. National Potato Day should fall on a Friday. Not only because frying is one of it’s tastiest preparations, but also to have the fabled ‘three day weekend’. You can do a lot of damage with three days off in a row. Tater tots, mashed, fried, scalloped, roasted…magical.
