Tuna Sausage: The Revolution Has Begun

It’s surprising how well this worked. And, I wouldn’t burn too much cash getting the $20/lb. fresh fish. H.E.B sells a good grade of frozen tuna perfect for this application. A glowing pink pound gets fed through the KitchenAid grinder’s medium die, along with a couple cloves of garlic. Sage, dried oregano, fennel seeds, ground dried chilis, salt and pepper provide the flavor pack. For the binder: one egg, ½ cup Panko breadcrumbs and a cup of shredded mozzarella.

To cook, I formed them into small paddies. From the 1 3/8 pound of ingredients I made twelve patties. Cook them slowly over medium heat. I think I will try a spicier flavor pack next time. Maybe a Chorizo style. Muy bueno.
