Tito Vanilla Meyer Lemonade

Porch weather is upon us again. That could only mean one thing: fruity adult beverages. I was gifted 1.2 tons of Meyer lemons a few months back. Good news, they are out of hibernation and hanging out with the wrong crowd.

If all of these went into a single juice box, it would be the size of Rhode Island. I started with five or six gallons of juice and boiled it down to two. Then, I froze the concentrated liquid in three to four cup containers.

Vanilla sugar is easy. Stick a few vanilla beans in a mason jar of sugar and let it sit for a few days. To test, stick your finger in your mouth and then into the sugar. Repeat until someone tells you to stop.

This recipe is kind of loose. I reconstituted the lemon juice and added sugar until my face stopped puckering. Mix two thirds lemonade with one third Tito’s vodka and finish it with a hit of Topo Chico. I recommend not making plans to drive anywhere the rest of the afternoon.
