Our neighbors’ daughter just got hitched. A reception party was planned. The theme: Mexican Fiesta Potluck Wedding Reception. Of course it is. But, what to bring (pointed forefinger touching chin)? Fiesta Caesar Salad with Fried Cornbread Croutons and Cotija Cheese. BOOM! I think I’m breaking new ground here. Sometimes it feels like I am some sort of modern Harry Houdini. Except with less cool hair.
Polenta croutons are usually the go-to crunch for this salad. Polenta doesn’t really ring my bell. Fried corn bread cubes? That’s a whole different story. Sweet and light, like little crunchy donuts.
I started out with a basic Caesar dressing recipe: mayo, red wine vinegar, anchovies, garlic, lemon, black pepper. It gets Fiesta-ized with the addition of Tabasco and cayenne pepper. Salad- 1. Pony Pinata- 0.
