First, get some Hatch chili peppers. Second, build a wood burning oven. Third, light a match. It’s as easy as that. Charred these babies beyond belief. Pulled them out and dropped them into a sealed container to steam the charred skins off. Now, what to do with them?

oh my god…what to do with them??!?!? let the new mexican tell you…
breakfast eggs, green chili stew, on top of one of your fabulous pizzas, green chili chicken enchiladas(!!), potatoes au gratin (w/chili), humm, what else?? on top of your buffalo burger… i’ll keep thinking
sautee with fresh corn and onion, then drop in some cubed queso fresca. Wrap in corn tortilla with a little sour cream. Enjoy.
Roast some corn & calabasitas in there as well…. make a stew in your oven!!!
