Fried Chicken Sandwich

Rosemary Focaccia wrapped American Style Brined Fried Chicken (with house pickles). The chicken took two days, the bread took three. I know. Shut up. I like doing this kind of thing.

Remove the bones from the thigh (reserve for stock). Salt and Sugar brine for 24 hours. Then a few hours to dry out in the fridge. Then and egg wash and….

Wheat Flour, Corn Starch and Baking Powder dredge. Then back into the fridge till that crust turns into concrete.

First fry at 325F for nine minutes. Internal temp should hit 170F

The crust will be a pale tan, like a Math Major who had to take the long way round though campus. Wrap in plastic and chill it back down in the fridge.

Now it’s on. SECOND FRY! No more messing around. 375F for four minutes. If you are ever short on tools and need to cut through a chain link fence, use the above. Dangerously crunchy. Could also be handy as a shank in your local correctional facility.

English Cucumbers, Red Onion in a quick pickle of salt, sugar, garlic and black pepper corns.
