Black Bean Tostada

Charred Serrano Tomato Salsa, with Black Beans, Creme Fraiche, Pickled Vegetables and Cilantro

Yellow onion, garlic, whole black beans and a whole lot of bacon grease. Then blend it up. Add a little water if you need to thin it out a bit.

Pickling liquid: Three cups H2O, one cup White Vinegar, two tablespoons salt, one tablespoon sugar, three garlic cloves.

Pickled Serrano peppers, Red Onion and Cherry Tomatoes.

Shallow fried corn tortilla in Canola oil. Cook slowly for maximum crunchiness. Medium or medium-high. Drain on a wire rack and add salt.

Crazy good dish. And, I had all the ingredients already in house! That’s a double win.
