Dressed with sour cream, cheddar cheese, and cilantro.

Breakfast of Champions
We had friends in from out of town this weekend. Something about a wedding. Scrambled Eggs with Shallots (one of my favorite ingredient combinations), Un-cured Apple Smoked Bacon and Roasted Potatoes with Garlic Confit. Good way to start the day. And, our friends did the dishes! (Thanks, Jen.)
Tuna Sausage: The Revolution Has Begun
It’s surprising how well this worked. And, I wouldn’t burn too much cash getting the $20/lb. fresh fish. H.E.B sells a good grade of frozen tuna perfect for this application. A glowing pink pound gets fed through the KitchenAid grinder’s medium die, along with a couple cloves of garlic. Sage, dried oregano, fennel seeds, ground dried chilis, salt and pepper provide the flavor pack. For the binder: one egg, ½ cup Panko breadcrumbs and a cup of shredded mozzarella.
